Banana Coconut Bread
2 eggs
1 cup organic sugar
½ cup sunflower oil
3 over-ripe bananas, mashed
1 tsp almond flavouring
1½ cups whole wheat flour
½ cup coconut flakes
1½ tsp baking powder
½ tsp baking soda
½ tsp sea salt
½ cup Maraschino cherries, cut up
In medium bowl, beat eggs. Add sugar and oil. Beat well. Add mashed
bananas and almond flavouring. In a large bowl, mix flour, coconut,
baking powder, baking soda, salt and cherries. Stir wet ingredients into
flour mixture and stir well. Pour batter into oiled loaf pan and cook at
350° F for an hour.
