Mexican Style Meatballs
1 lb each, lean ground beef and ground pork
1 egg
4 tbsp oatmeal
1 tsp each, salt and pepper
2 cloves garlic, minced
½ cup water
1 red pepper, chopped
2 tsp olive oil
1 onion, minced
1 tsp each, cumin, cilantro, coriander, paprika and Cayenne pepper
1 can (28 oz) diced tomatoes with juice
1 cup chicken broth
In a large bowl, combine ground beef and pork, eggs, meal, salt and
pepper, garlic and water. Form into 1 inch meatballs. Bake at 375° for
30 minutes. In a large skillet, heat oil. Sauté onion. Add garlic, red
pepper, spices and ½ tsp salt. Add diced tomatoes and chicken broth.
Bring to a boil and add meatballs. Cover and simmer for an hour.
