Norwegian Meatballs
2 eggs
½ cup milk
1 cup oatmeal
½ onion, minced
2 tsp salt
2 tsp sugar
½ tsp each, ground ginger, nutmeg, allspice and pepper
2 pounds lean ground beef
1 pound ground pork
3 tbsp butter
2 tbsp mince onion
5 tbsp flour
4 cups beef broth
½ cup whipping cream
dash of Cayenne pepper and white pepper
In large bowl, combine eggs, milk, oatmeal, ½ of an onion, salt,
sugar, ginger, nutmeg, allspice and pepper. Add meat and mix
well. Shape into 1 inch meatballs. Place in baking pans. Bake a
t 375° F for 30 minutes. Set aside.
Melt butter in large skillet. Saute 2 tbsp minced onion until tender.
Stir in flour and brown lightly. Add broth and stir until thickened.
Blend in whipping cream, Cayenne and white pepper. Gently stir
in meatballs. Cover and simmer for an hour.
