Oatmeal Banana Muffins
1 cup rice milk
1 cup oatmeal
1 egg
¼ cup olive oil
¾ cup unbleached flour
¼ ground flax seed
½ cup organic sugar
2 tsp baking powder
1 tsp baking soda
½ tsp sea salt
½ cup honey
3 over ripe bananas, mashed
In a small bowl, combine milk and oatmeal, let sit for 15 minutes.
In separate bowl, beat together oil and egg. Stir in oatmeal mixture.
In large bowl combine flour, ground flax seed, baking powder,
baking soda, sugar and sea salt. Add wet ingredients, bananas and
honey. Spoon batter into greased muffin tins, large muffin tins or mini
loaf pan. Bake at 425° F for 20 minutes.
