Pasta Salad
½ box of rotini pasta
1 tbsp olive oil
¼ cup green onions, chopped
2 Roma tomatoes, finely chopped
precooked sausage or pepperoni, chopped
¼ cup fresh parsley, chopped
1 cup black olives (optional)
1 small jar pimentos (optional)
container of feta cheese, cut in desired sized pieces
Dressing:
3 tbsp balsamic vinegar
¾ cup olive oil
2 cloves garlic, crushed
¼ cup fresh basil, chopped
freshly ground pepper
Cook pasta and toss with 1 tbsp. olive oil. Mix with remaining ingredients.
Toss with dressing. Serve warm or cold.
