Pancakes and Waffles
Potato Pancakes
5 potatoes, peeled and shredded
2 eggs, beaten
1 onion, finely chopped
3 tbsp unbleached flour
1 tsp each, salt and pepper, dill, garlic powder, and onion powder
Blend Potatoes in food processor. Add other ingredients. Process
till mixed. In skillet, heat oil. Pour eight scoops, using a small
ladle, into hot skillet. Cover and cook 10 minutes per side.
Serve with sour cream.
