Cheese Souffle
3 tbsp flour
2 tbsp butter
1 cup milk
½ tsp salt
3 eggs, separated
7 oz. Cheddar cheese, cubed
1 oz. Grated cheddar cheese
Melt butter in small sauce pan. Whisk flour and milk together, whisk into
melted butter, a little at a time. Leave to cool. Stir in egg yolks, salt and
cheese cubes. Beat egg whites until stiff and fold them carefully into cheese
mixture. Pour mixture into greased, small casserole dish. Sprinkle grated
cheese on top. Bake at 400° for about 50 minutes. Serve with bread
or rolls and butter.
