Cornbread Muffets

½ cup Becel Vegan margarine
2/3 cup organic sugar
2 eggs
1 cup rice milk
½ tsp baking soda
1 cup cornmeal
1 cup unbleached flour
½ tsp salt

Grease 12 muffin tins. Melt margarine and add sugar. Add eggs
​and beat. Add rice milk and baking soda. Stir in cornmeal, flour
​and salt until well blended. Pour batter into prepared tins. Bake at
​375° for 20 minutes.
