Cornbread Muffets
(Cornbread Muffins)
½ cup Becel Vegan margarine
2/3 cup organic sugar
2 eggs
1 cup rice milk
½ tsp baking soda
1 cup cornmeal
1 cup unbleached flour
½ tsp salt
Grease 12 muffin tins. Melt margarine and add sugar. Add eggs
and beat. Add rice milk and baking soda. Stir in cornmeal, flour
and salt until well blended. Pour batter into prepared tins. Bake at
375° for 20 minutes.
