Egg’n
Muffin
1 egg
salt and freshly ground pepper
1 English muffin, halved
mayonnaise or miracle whip
2 slices of desired cheese
1 sausage round, precooked
¼ tsp. dill, optional
1 green onion, chopped, optional
1-2 tsp salsa, optional
Toast both halves of English muffin, spread both halves with mayo
or miracle whip. Crack egg open in a small, flat, microwave safe
container. Using a fork, puncture the yolk a few times. Or cook in
a mini double boiler or sauce pan. Sprinkle on salt and pepper. Add
green onions and dill, if desired. Cook in microwave for 30 seconds
or in desired pan for 3 minutes. Add cheese and cook for another 30
seconds. Place egg on one half of English muffin, followed by sausage
round or salsa or both. Top with other half of English muffin and voila,
you have an Egg'n muffin. Serve with hash browns.
