Pumpkin Banana Bread
3 cups whole wheat flour
¼ cup ground Flax seed
2 tsp baking soda
1 tsp each, nutmeg, ground cloves and cinnamon
1 cup sunflower oil
1 cup each, pumpkin puree and mashed, over-ripe bananas
1 ½ tsp salt
1 cup organic sugar
2/3 cup water
2 eggs
Grease and flour 3 loaf pans or 3 sets of mini-loaf pans. Combine flour,
sugar, baking soda, salt and spices. Add pumpkin, bananas, water, oil
and eggs. Beat until well combined. Pour or spoon batter into prepared
pans. Bake at 350° F for 1 hour if you’re baking loaves, ½ an hour if
you’re baking mini-loaves.
