Swedish Meatballs
Meatballs:
1 white onion, peeled and grated
2 tbsp butter
2/3 cup milk
4-5 slices of bread, crusts removed, bread cut into pieces
2 eggs
1 pound ground pork
1 ½ pounds ground beef
1 tsp nutmeg
1 tsp cardamom
2 tsp pepper
Sauce:
6 tbsp butter
1/3 cup flour, whisked with ¼ cup cold water
1 quart beef stock
½ to ¾ sour cream
salt
2 to 4 tbsp red current or raspberry jelly
Sauté the grated onion in the butter over medium-high heat until
onions soften and turn translucent, about 3-4 minutes. Remove
and let cool. In a medium bowl, mix the bread pieces with the milk.
Set aside for 15-20 minutes. Process mixture in food processor
then pour into large bowl. Add the cooled onions and remaining
ingredients for meatballs. Form small meatballs and cook meatballs
in frying pan or oven, 375° for 30 minutes, turning over after 15
minutes, then place on paper towel. Heat 6 tbsp of butter for sauce
in a large sauce pan, over medium heat. Slowly whisk in flour mixture,
stir in beef broth, sour cream, salt and jelly. Add meatballs, stir and
simmer for 30 minutes.
