Tourtiere
Pastry:
3 cups flour
1 tsp salt
250 g shortening
ice water
1 egg, beaten
Combine flour and salt. Blend in shortening. Gradually blend in enough
water to allow flour and shortening to just hold together. Turn dough onto
a floured surface, form into a ball, and divide into two. Roll out one
bottom shell and place into pie pan.
Roll out second layer of pastry and set aside.
Filling:
1 lb. ground pork
1 onion, chopped
1 clove garlic, minced
½ tsp each, salt, sage and celery salt
¼ tsp ground cloves
½ cup water
½ cup fine breadcrumbs
Place all ingredients, except for breadcrumbs, into large saucepan. Bring to
a boil. Reduce to medium and cook 20 minutes. Remove from heat and add
breadcrumbs. Let stand for 10 minutes. Cool and place mixture on top of
pastry shell. Place second layer of pastry on top and bake at 400° F for
30 minutes, or until crust is golden brown.
Traditionally, Tourtiere is served with green tomato relish after Christmas Mass.
